Easy Banana Loaf (The One With the Blackest Bananas)
This is the banana loaf I make with the bananas everyone else throws out, black-spotted and soft!
Equipment Needed
- 9x5-inch loaf pan
- Parchment paper (for easy lift-out)
- Two mixing bowls
- Whisk
- Fork or potato masher for the bananas
- Wire cooling rack
- Toothpick

Instructions
- Preheat oven to 350°F (175°C). Line loaf pan with parchment.
- Mash bananas in a bowl until mostly smooth.
- Whisk in melted butter, brown sugar, eggs, vanilla, sour cream.
- In a separate bowl, whisk flour, baking soda, salt, cinnamon.
- Fold dry into wet in two additions, until just combined.
- Pour into pan, smooth top, tap once to release air bubbles.
- Bake 55–65 minutes, tenting with foil if top browns too fast.
- Toothpick should come out with a few moist crumbs.
- Cool in pan 10 minutes, then turn out onto a rack. Cool fully before slicing.
