Traditional oven charts commonly round 180°C to 350°F; 356°F is the mathematical conversion.

Recipes do not always use the same oven scale. A British recipe may give a fan temperature, an older recipe may use a Gas Mark, and an American recipe may be written in Fahrenheit. This converter brings those settings together so you can compare them without working through the maths yourself.

Celsius and Fahrenheit are true temperature units, so they can be converted mathematically. Fan-oven settings and Gas Marks are different: they are practical cooking conventions, which means those results should be treated as useful starting points rather than laboratory-equivalent temperatures.

How to Use the Oven Temperature Converter

Choose the temperature type used by your recipe, enter the value, and the converter will show the equivalent conventional Celsius, fan Celsius, Fahrenheit and UK Gas Mark setting.

If your recipe already gives a separate fan temperature, use that figure directly. Do not subtract another 20°C.

Celsius and Fahrenheit Conversions

Celsius and Fahrenheit measure the same physical quantity using different scales.

The exact formulas are:

  • Fahrenheit = (Celsius × 9 ÷ 5) + 32
  • Celsius = (Fahrenheit − 32) × 5 ÷ 9

That means 180°C converts mathematically to 356°F. Traditional cooking charts often show 350°F instead because oven controls and recipe temperatures are normally given in convenient rounded settings.

Conventional and Fan Ovens

A fan oven circulates heated air around the oven cavity. This can transfer heat more efficiently than conventional top-and-bottom heat, so UK recipes often give a lower temperature for fan cooking.

A widely used starting adjustment is:

Conventional temperature − 20°C = fan temperature

So:

  • 160°C conventional → about 140°C fan
  • 180°C conventional → about 160°C fan
  • 200°C conventional → about 180°C fan
  • 220°C conventional → about 200°C fan

This is a practical convention, not an exact rule for every appliance. If your recipe or oven manufacturer gives a different setting, follow that guidance.

Gas Mark conversions are approximate. Oven manufacturers do not all use precisely identical temperature relationships, particularly around the lower and upper ends of the scale.

Why Your Oven May Still Cook Differently

A converted number is only the starting setting. Two ovens set to the same temperature can brown or cook food differently because of calibration, airflow, shelf position, tray colour and heating-element design.

For baking, follow the recipe's doneness cues as well as its stated time. If a cake consistently colours too quickly or takes much longer than expected, an oven thermometer can also help you check whether the actual oven temperature matches the dial.
