What You Need

Digestive biscuits, butter, cream cheese, heavy cream, caramel, and bananas.

  • 250g Digestives or Graham crackers, crushed

  • 100g unsalted butter, melted

  • 400g cream cheese, softened

  • 300ml double cream / heavy cream

  • 75g icing sugar / powdered sugar

  • 1 tsp vanilla extract

  • 397g tin Dulce de Leche / carnation caramel

  • 2-3 ripe bananas, sliced

  • Garnish: Dark chocolate shavings

How to Make No-Bake Banoffee Cheesecake

1. Step 1

Combine crushed biscuits and melted butter. Press firmly into bottom of 8-inch springform pan. Chill 15 minutes.

2. Step 2

Whip cream cheese, icing sugar, and vanilla until smooth. In separate bowl whip double cream to stiff peaks. Fold cream into cream cheese mixture.

3. Step 3

Spread 3/4 of caramel over base, top with sliced bananas, then spread cheesecake filling on top. Chill 6 hours or overnight. Top with extra caramel and chocolate shavings before serving.
