
Blueberry Oatmeal Muffins (Hearty, Not Heavy)
Blueberry oatmeal muffins made with rolled oats, buttermilk, cinnamon and fresh blueberries for a soft, tender crumb!
Equipment Needed

- Paper liners
- Two mixing bowls
- Whisk
- Kitchen scale (optional but useful)
- ⅓-cup scoop
- Wire cooling rack

Instructions
- Soak rolled oats in buttermilk for 10 minutes to soften.
- Preheat oven to 204°C (400°F). In a large bowl, whisk flour, baking powder, bicarbonate of soda, salt and cinnamon.
- Whisk brown sugar, egg, melted butter and vanilla into the soaked oat mixture.
- Pour wet oat mixture into dry flour. Fold gently about 8–10 times until mostly combined.
- Toss blueberries with 1 tbsp flour and fold into batter with 2–3 gentle strokes.
- Divide batter evenly among 12 muffin cups and scatter extra rolled oats on top.
- Bake at 204°C (400°F) for 5 mins, reduce to 175°C (350°F) and bake 15–17 mins more until a skewer comes out with moist crumbs.
- Cool in tin for 5 minutes, then transfer to a wire rack to cool completely.
