Blueberry Oatmeal Muffins (Hearty, Not Heavy)
I started making these when I got tired of muffins that taste like cake pretending to be breakfast!
Equipment Needed
- 12-cup muffin tin
- Paper liners
- Two mixing bowls
- Whisk
- Kitchen scale (optional but useful)
- ⅓-cup scoop
- Wire cooling rack
Ingredients

Instructions
- Soak oats in buttermilk, 10 minutes.
- Preheat oven to 400°F (204°C). Whisk flour, baking powder, baking soda, salt, cinnamon in a bowl.
- Whisk brown sugar, egg, melted butter, vanilla into soaked oats.
- Pour wet into dry. Fold 8–10 strokes until mostly combined.
- Fold in floured blueberries, 2–3 strokes.
- Fill liners nearly to top. Top with a few extra oats.
- Bake 5 minutes at 400°F, reduce to 350°F, bake 15–17 minutes more, until toothpick comes out mostly clean.
- Cool in tin 5 minutes, transfer to rack.
