
Crispy Chicken Caesar Salad (with Homemade Dressing)
This chicken Caesar salad combines crisp romaine, golden pan-seared chicken, crunchy croutons and a homemade anchovy dressing!

- Large salad bowl
- Fine grater for Parmesan

Instructions
- Pat the chicken breasts dry with kitchen paper, then season both sides with garlic powder, salt and black pepper.
- Heat olive oil in a frying pan over medium-high heat. Cook chicken undisturbed for 5 minutes until a golden crust forms and it releases easily.
- Flip and cook for 5–6 minutes more until cooked through (75°C for at least 30 seconds). Rest for 5 minutes before slicing.
- For the dressing, combine the anchovy, garlic, egg yolk, lemon juice and Dijon mustard until smooth. Whisk continuously while adding the dressing olive oil in a very thin stream until pale and creamy, then stir in the Parmesan and season to taste.
- Toss romaine with dressing, croutons and half the Parmesan. Top with sliced chicken and remaining Parmesan. Serve immediately.
