Crunchy Lemon-Herb Chickpea Salad
This is the chickpea salad I make when I want something that holds up in the fridge for days and still tastes bright on day three!

Instructions
- Drain and rinse chickpeas under cold water until liquid runs clear, about 30 seconds.
- Dice cucumber, halve tomatoes, and finely dice red onion. Aim for pieces roughly the size of a chickpea.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, and oregano until cloudy and slightly thickened, about 20 seconds of whisking.
- In a large bowl, combine chickpeas, cucumber, tomatoes, onion, and parsley.
- Pour dressing over the salad and toss to coat evenly. Add feta if using, and season with salt and pepper. Taste and adjust, chickpeas need more salt than you'd guess.
- Let sit at room temperature for 15 minutes minimum before serving, or refrigerate up to 3 days. Give it one more toss just before serving, the dressing settles at the bottom.
