How to Make Chocolate Pistachio Cake with Pistachio Ganache

1. Step 1

Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.

2. Step 2

Stir in hot coffee (batter will be thin). Divide between pans. Bake 30-35 minutes until a toothpick inserted comes out clean. Cool in pans 10 minutes, then turn onto wire racks.

Heat cream until steaming; pour over chopped white chocolate. Let sit 2 minutes, then whisk smooth. Stir in pistachio paste. Chill 20 minutes until spreadable. Frost cake layers and top with crushed pistachios.
