- Melt butter in a large pot over medium heat. Add onion, carrots, and celery; cook 6-8 minutes until translucent. Add garlic and cook 1 minute more.
- Sprinkle flour over vegetables, stir constantly for 1 minute to cook off raw flour taste.
- Slowly pour in chicken stock while stirring to prevent lumps. Add raw chicken breasts (if poaching), bay leaves, and thyme. Simmer gently for 15-18 minutes until chicken is cooked through.
- Remove chicken and shred once cool enough to handle. Discard bay leaves. Stir heavy cream into the pot.
- Add egg noodles, simmer 8-10 minutes until tender. Return shredded chicken to the pot and warm through for 2-3 minutes.
- Season with salt and pepper to taste. Ladle into bowls and garnish with fresh parsley.
