How to Make Creamy Green Pasta

Step 1

Cook the pasta in salted boiling water according to packet instructions. In the last 2 minutes of cooking, drop the green peas directly into the boiling pasta water. Reserve 120ml of starchy pasta water, then drain.

In a blender, combine the spinach, cooked peas, herbs, garlic, double cream (heavy cream), Parmesan, butter, lemon juice, salt, and pepper. Blend on high until completely smooth and bright green.

Step 3

Pour the bright green sauce into the warm pan over low heat. Add the drained pasta and a few splashes of reserved starchy pasta water. Stir continuously for 1–2 minutes over gentle heat until the pasta is well coated and steaming hot.

Step 4

Fold in cooked sliced chicken breasts if using. Serve hot in bowls garnished with extra grated Parmesan, black pepper, and fresh herbs.

Ways to Adapt the Green Sauce

For extra protein, fold in sliced cooked chicken or cooked garlic prawns just before serving. For a dairy-free version, use a suitable plant-based cream or full-fat coconut milk, replace the butter with a plant-based alternative and use a dairy-free Parmesan-style substitute or nutritional yeast.
