- Whisk eggs, milk, salt, and pepper in a bowl until pale and slightly frothy, about 30 seconds.
- Heat butter in a nonstick skillet over medium-low heat until melted and foamy.
- Pour in eggs, let sit undisturbed for 10 seconds. Push cooked edges toward the center with a spatula, tilting the pan to let raw egg flow underneath. Repeat for 1 minute until mostly set.
- Scatter ham and cheese over one half of the omelette. Let cheese sit 20-30 seconds to begin melting.
- Fold the empty half over the filling using the spatula. Slide omelette onto a plate, garnish with chives if desired, and serve immediately.
