
Classic Ham and Cheese Omelette
Tender eggs folded around warm ham and melted cheese, cooked gently on the hob and ready in about 10 minutes.

- Small non-stick frying pan (around 20cm / 8-inch)
- Whisk or fork
- Silicone spatula
- Small bowl

Instructions
- In a bowl, whisk together the eggs, milk, salt and pepper until pale yellow and slightly foamy (about 30 seconds).
- Melt the butter in a non-stick frying pan over medium-low heat until it foams gently without browning.
- Pour in the eggs and leave them undisturbed for about 10 seconds. Gently push the cooked edges towards the centre with a spatula while tilting the pan so the uncooked egg flows underneath. Continue for about 1 minute, until mostly set but still slightly soft on top.
- Scatter the diced ham and grated cheese over one half of the omelette. Allow the cheese to begin melting for 20–30 seconds.
- Fold the unfilled half over the ham and cheese. Carefully slide the omelette onto a plate, garnish with chives if desired, and serve immediately.
