Lemon Blueberry Muffins with Crackly Sugar Tops
These muffins came out of a Tuesday when I had three lemons going soft and a pint of blueberries about to turn!
Equipment Needed
- 12-cup muffin tin
- Paper liners
- Two mixing bowls
- Whisk
- Box grater or microplane for zest
- Ice cream scoop or ⅓-cup measure for even portions
- Wire rack
Ingredients

Instructions
- Preheat oven to 425°F (218°C).
- Whisk flour, baking powder, salt in one bowl.
- Rub lemon zest into sugar.
- Whisk in eggs, melted butter, milk, lemon juice, vanilla.
- Pour wet into dry. Fold 10–12 strokes until just combined.
- Fold in floured blueberries, 2–3 strokes.
- Fill liners nearly to top. Top with coarse sugar.
- Bake 5 minutes at 425°F, then reduce to 350°F and bake 15–17 minutes more, until a toothpick comes out clean.
- Cool in tin 5 minutes, transfer to a rack.
