
Lemon Blueberry Muffins with Crackly Sugar Tops
These lemon blueberry muffins have soft centres, fresh blueberries and crisp sugar tops!
Equipment Needed
- 12-hole muffin tin
- Paper cases
- Two mixing bowls
- Whisk and rubber spatula
- Box grater or microplane for zest
- Ice cream scoop or ⅓-cup measure
- Wire rack

Instructions
- Preheat oven to 218°C (425°F) and line a 12-hole muffin tin with paper cases.
- In a large mixing bowl, whisk together the flour, baking powder and salt.
- Rub the lemon zest into the sugar with your fingertips until pale yellow and fragrant.
- Whisk the room-temperature eggs, melted butter, milk, lemon juice and vanilla into the lemon sugar.
- Fold the wet mixture into the dry ingredients until only a few small streaks of flour remain.
- Toss blueberries with 1 tbsp flour and fold gently through the batter with 3–4 strokes.
- Divide batter among 12 muffin cases and sprinkle the coarse sugar over the tops.
- Bake at 218°C (425°F) for 5 mins, reduce to 175°C (350°F) and bake 15–17 mins more until a skewer comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
