- Separate eggs, placing yolks and whites in separate bowls. Whisk ricotta, egg yolks, milk, vanilla, lemon zest, and lemon juice together until mostly smooth.
- In a separate bowl, whisk flour, sugar, baking powder, and salt. Fold dry ingredients into the wet mixture just until combined.
- In a clean, dry bowl, whip egg whites to soft peaks.
- Gently fold whipped whites into the batter in two additions, until no white streaks remain.
- Heat a lightly buttered skillet over medium-low heat. Pour 1/4 cup batter per pancake onto the skillet. Cook 2-3 minutes, until bubbles form on surface and edges set. Flip gently with a wide spatula and cook another 1-2 minutes until golden. Repeat with remaining batter and serve warm.
