
Easy Broccoli and Stilton Soup Recipe
A rich and creamy broccoli and Stilton soup with classic British flavour, easy to make for a warming lunch or light dinner!

Instructions
- Separate the broccoli florets from the stalk. Trim the woody end, peel any tough outer skin, then dice the stalk into small, even pieces. Set florets aside. This keeps the two parts ready for their different cooking times.
- Melt butter with rapeseed oil over medium-low heat. Add onion and leek; cook 6–7 minutes until soft but not browned. Stir in garlic for 30 seconds until fragrant.
- Add diced potato and broccoli stalk. Pour in the stock and bring to a gentle simmer. Cover loosely and cook 10–12 minutes until potato and stalk are almost tender.
- Add broccoli florets. Simmer uncovered for 5–6 minutes until bright green and tender. Avoid overcooking to keep the colour vivid.
- Remove from heat and stir in the milk. Blend with a stick blender until completely smooth. Adjust with a little extra stock or milk if the soup is too thick.
- Return to low heat and stir in 100g Stilton until melted, without boiling. Add black pepper and taste before salting. Serve with the reserved 20g Stilton crumbled on top.
