Instructions
- Preheat oven to 200°C / 180°C fan / Gas Mark 6. Halve squash lengthwise, scoop out seeds, and cut into wedges or 3cm chunks.
- Arrange squash in a single layer on a lined tray. Drizzle with 2 tbsp olive oil, season with salt and pepper, and roast 38–45 minutes until tender with caramelised edges.
- Warm remaining 1 tbsp olive oil in a saucepan over medium heat. Cook onion and garlic 5–6 minutes. Stir in ginger, cinnamon and cayenne for 1 minute.
- Add roasted squash flesh and vegetable stock to the pot. Simmer gently for 8–10 minutes to let the flavours meld.
- Blend with an immersion stick blender until rich and velvety. (Jug blender: cool 15 minutes, fill halfway, vent lid). Stir in optional cream if using.
- Reheat gently. Taste and season with salt and pepper. Ladle into warm bowls and serve with toasted sourdough.

Chef's Notes & Expert Advice
- Spacing the squash properly on the roasting tray is essential. When pieces are crammed together, they steam in their own moisture rather than caramelising. Genuine browning at 200°C develops rich Maillard reaction flavours that cannot be achieved by boiling alone. Be sure to scrape every sticky brown bit from the roasting tray into the stockpot.
