Instructions
- Brown seasoned lamb chops in oil in a frying pan, 2–3 minutes per side. Preheat oven to 170°C / 150°C fan / Gas Mark 3.
- Scatter onions and carrots into a 24–26cm casserole dish. Place lamb on top with thyme. Pour stock mixed with Worcestershire sauce around meat to reach halfway up.
- Arrange potato slices in overlapping concentric rings over lamb. Brush with half the melted butter and season with salt and pepper.
- Cover with lid and bake for 1 hour 45 minutes at 170°C / 150°C fan. Check midway; add a splash of stock if dry.
- Remove lid, brush with remaining butter, and bake uncovered at 200°C / 180°C fan for 35–40 minutes until potatoes are crisp and golden.
- Rest 10 minutes before serving. Lamb should be meltingly tender; if firm, bake covered for an extra 20–30 minutes.
- Rest 10 minutes before serving directly from the casserole.
