
Easy British Coleslaw Recipe – Creamy & Crunchy
A creamy, crunchy British coleslaw made with crisp cabbage and carrot, perfect for lunches, barbecues and easy side dishes!

- Box grater or julienne grater

Instructions
- Remove any damaged outer leaves. Quarter the cabbage and cut out the hard core. Shred finely into short strips — pieces should bend slightly when squeezed but stay crisp.
- Coarsely grate the carrots, keeping the strips distinct rather than pulpy. Very finely slice the red onion so it adds mild flavour without overpowering.
- Whisk mayonnaise, yoghurt, cider vinegar, Dijon mustard, caster sugar, salt and pepper together until smooth. Taste on its own — vinegar and mustard should be clearly noticeable before mixing with the vegetables.
- Combine cabbage, carrot and onion in a large bowl. Add three-quarters of the dressing and toss thoroughly. Add remaining dressing gradually — vegetables should stay visible, not drowned in mayonnaise.
- Taste and adjust seasoning if needed. Serve immediately for maximum crunch, or chill 20–30 minutes for a colder result. Stir once more before serving.
