Chef's Notes & Expert Advice
- Dressing new potatoes while they are warm is the definitive technique that separates exceptional potato salad from an ordinary one. Warm potato starch readily absorbs the vinegar and seasoned olive oil, infusing flavour throughout the potato rather than leaving it coating the skin. Always reserve a third of the dressing to drizzle immediately before serving to restore a vibrant gloss.
