Getting the Strawberry-Banana Balance Right

  • A ripe banana gives the smoothie natural sweetness and enough body to make the strawberries taste fuller without needing added sugar.
  • Fresh strawberries give a lighter, easy-pouring result, while frozen strawberries make the same blend colder and noticeably thicker.
  • Natural yoghurt adds creaminess without turning the smoothie overly rich, and the milk keeps it easy to blend and pour.
  • Because the fruit provides most of the flavour, only a small amount of vanilla is needed in the background rather than making the drink taste strongly of vanilla.

A Few Ingredients That Shape the Texture

This smoothie uses just a handful of ingredients, but the ripeness of the banana and whether the strawberries are fresh or frozen make the biggest difference to its sweetness and thickness.

  • Strawberries, hulledFresh or frozen both work — frozen strawberries give a colder, thicker result.

  • Medium ripe banana, peeledUse a banana with yellow skin and some brown speckling for natural sweetness and creaminess.

  • Semi-skimmed milk, chilled

  • Natural yoghurtAdds body and a mild tang without turning the drink into a yoghurt-based one.

  • Vanilla extractKeep to this amount so it rounds out the flavour rather than dominating it.

How to Make Strawberry Banana Smoothie

Step 1

Wash the strawberries, remove the leafy tops and halve any larger berries. Peel the banana and roughly slice it. If you're using frozen strawberries, they can go straight into the blender rather than being prepared first, as long as your blender can handle frozen fruit.

Step 2

Add the milk and yoghurt to the blender first, then add the strawberries, banana and vanilla extract. Putting the liquid in before the fruit helps the blender get moving smoothly from the start, rather than struggling against solid fruit sitting on the blades.

Step 3

Blend until completely smooth, which usually takes around 30–45 seconds depending on your blender and whether the strawberries are frozen. Once the mixture is completely smooth, stop blending rather than leaving the motor running unnecessarily; extra blending can introduce more air and leave a foamier texture on top.

Step 4

Check the consistency. If it's too thick, add milk a tablespoon at a time, blending briefly between each addition, until it pours easily. If it's too thin, blend in a few extra frozen strawberries or a small piece of banana rather than trying to thicken it another way.

Step 5

Pour immediately into two glasses and serve straight away, while the smoothie is at its coldest and the fruit flavour is freshest.

Ways to Adjust the Fruit and Creaminess

Frozen strawberries are the easiest way to make the smoothie colder and thicker without adding ice. For a dairy-free version, replace the milk with an unsweetened plant-based milk and use a plain dairy-free yoghurt. The vanilla can be left out if you want the fruit flavour to stay more direct. A spoonful of smooth peanut butter gives the drink a richer, nuttier finish, while a small amount of chia or ground flaxseed can be blended in if you already use them in smoothies. If the fruit is not very sweet, taste the finished drink first and add a little honey only if it genuinely needs it.

Serve It While the Fruit Is Cold

Pour the smoothie into glasses as soon as it has finished blending. The texture is at its best while the fruit and yoghurt are still cold, particularly if frozen strawberries were used. It works well on its own as a quick drink, or alongside something more substantial such as toast or a small bowl of porridge.

Keep the Smoothie Creamy Without Over-Thinning It

Start with the listed amount of milk and check the texture only after the fruit has fully broken down. If the smoothie is too thick, add extra milk a tablespoon at a time rather than pouring in a large amount at once. If it is too thin, a few frozen strawberries or a small piece of banana will add body without diluting the fruit flavour. This gradual adjustment is much easier to control than trying to correct a smoothie after too much liquid has been added.

Instructions

  1. Wash and hull the strawberries, halving any larger berries. Peel and roughly slice the banana. Frozen strawberries can go straight into a suitable blender without thawing.
  2. Pour the chilled milk and natural yoghurt into the blender first. Add the prepared strawberries, ripe banana and vanilla extract on top so the liquid sits close to the blades.
  3. Blend for around 30–45 seconds until the mixture is completely smooth and evenly pale pink, with no visible fruit pieces remaining. Stop blending once the desired texture is reached.
  4. Check the consistency before serving. If too thick, add milk 1 tablespoon at a time. If too thin, blend in a few extra frozen strawberries or a small piece of banana.
  5. Divide the finished smoothie between two serving glasses and serve immediately while cold and freshly blended.
