Instructions
- Preheat oven to 190°C / 170°C fan / Gas Mark 5. Peel, core and chop apples into 3cm chunks. Place in a 25 × 20cm baking dish with blackberries (do not thaw if frozen).
- Sprinkle caster sugar, 1 tbsp flour and cinnamon over the fruit. Toss gently to coat evenly.
- In a bowl, rub cold cubed butter into flour using fingertips until it looks like coarse breadcrumbs with some small pea-sized lumps.
- Stir in rolled oats and demerara sugar until evenly distributed throughout the crumble mixture.
- Scatter topping loosely over fruit—do not press down. Place on a baking tray and bake 35–40 minutes (45 mins if fruit was frozen) until golden and juices bubble at the sides.
- Rest for 5–10 minutes before serving. Spoon into bowls and serve warm with custard, pouring cream or vanilla ice cream.

Chef's Notes & Expert Advice
- Keep your butter fridge-cold right until the moment of rubbing in. If your kitchen is warm, place the bowl of cubed butter in the freezer for 10 minutes beforehand; cold butter creates distinct flaky pockets, whereas warm butter smears into a dense paste. Never press the crumble topping down onto the fruit—leaving it loose and irregular creates peaks that toast to a brittle crunch in the oven. If using frozen blackberries, do not thaw them; adding them frozen prevents premature juice release and keeps the crumble base crisp.
