Instructions
- Soak raisins in warm water for 10 minutes; drain. Butter each bread slice generously on one side; slice diagonally into triangles. Preheat oven to 170°C / 150°C fan / Gas Mark 3.
- Arrange half the bread in a 20 × 25cm dish (butter-side up). Scatter half the raisins. Layer remaining bread and raisins on top, overlapping neatly.
- In a jug, whisk eggs, milk, double cream, caster sugar, vanilla and cinnamon until smooth and sugar dissolves.
- Pour custard slowly over bread. Press gently with a spoon to saturate all slices. Sprinkle with demerara sugar. Leave to soak at least 30 minutes (refrigerate if longer).
- Bake uncovered for 30–35 minutes until the custard is just set with a gentle wobble in the centre and bread tips are golden and crisp.
- Rest for 5–10 minutes so the custard firms up. Serve warm from the dish with pouring double cream or vanilla ice cream.

Chef's Notes & Expert Advice
- Slightly stale, thick-sliced bread is essential for success: fresh bread collapses into mush, whereas stale bread absorbs custard like a sponge while holding distinct layers. The 30-minute soaking step is non-negotiable—if preparing ahead for dinner, assemble and soak in the refrigerator for up to 1 hour, bringing it out 15 minutes before baking. For food safety, never leave raw egg custard at warm room temperature for longer than 30 minutes. Always bake uncovered so the buttered tips toast into crisp, golden contrast against the silky custard below.
