Instructions
- Preheat oven to 180°C / 160°C fan / Gas Mark 4. Lightly grease two 20cm round sandwich tins and line the bases with baking parchment circles.
- Beat softened butter and caster sugar together with an electric mixer for 4–5 minutes until pale, light and visibly aerated.
- Beat in eggs one at a time on medium speed, adding vanilla with the last egg. If mixture curdles, add 1 tbsp of flour and beat smooth.
- Sift in flour and baking powder. Gently fold with a metal spoon, fold in milk until just combined, then divide evenly between the two tins.
- Bake 22–25 minutes until golden and springy. Cool in tins 5 minutes, turn out onto a wire rack, and cool completely (45–60 minutes) before filling.
- Whip chilled double cream to soft peaks. Spread jam and cream over bottom sponge leaving a 1cm border. Top with second sponge and dust with icing sugar.

Chef's Notes & Expert Advice
- Room-temperature ingredients are essential for a light Victoria sponge: cold butter cannot hold trapped air during creaming, and chilled eggs will split the batter. Set your butter and eggs out an hour beforehand. To verify doneness without opening the oven early, look for golden tops pulling away slightly from the tin edges; a light fingertip touch in the centre should spring back immediately without leaving a dent.
